Lo zito è un formato di pasta lunga di forma circolare con un grosso buco in mezzo. Quando lo si spezza in due o più segmenti e lo si manda a svenire nell'acqua bollente salata, lo zito produce dei frammenti di pasta piccolissimi che non si buttano via, nossignori, che lo spreco è peccato mortale, e poi è bello stare ancora quei cinque-dieci minuti a tavola per ripescarli nel condimento.
