  • Nick Curtin, Alouette, Copenhagen

    Today on our episode #416 of All in the Industry, Shari Bayer's guest is Nick Curtin, Chef & Owner of Alouette in Copenhagen, Denmark, a one Michelin-star and Green Star fine dining restaurant rooted in full-circle sustainability, offering a tasting menu journey through Denmark’s rich culinary heritage, blending tradition with innovation.

    In its second incarnation, Alouette sits within a building opposite the King’s Garden, and offers a menu built around top-quality ingredients that have been rigorously sourced from hand-picked producers, delivered with the story of its well-balanced components and their origins. Shari had the pleasure of dining solo at Alouette a few days before this in-person interview in late May. (12:17)

    During her trip, Shari also attended The MAD Symposium, now its 7th year, bringing together a global community to discuss and shape the future of food. MAD is led by founder Rene Redzepi of Noma and team, and this year's theme was "Build to Last." Shari also took part in Spora Forum on "The Future of Food," the inaugural event at Spora, a global research center applying science to the pursuit of sustainable deliciousness, founded by Rasmus Munk of Alchemist (episode #391); launching the Spora Network.   • "On the Road" at Lengua Conference 2025, Miami - Nidal Barake, Elad Zvi, and Ryan King

    Today on our episode #415 of All in the Industry, Shari Bayer has a special “On the Road” show from Lengua Conference 2025, which took place April 9-10, 2025, in Miami, Florida at The Hub Miami, a collaborative event space, featuring two full days of inspiring talks about the future of the food business, plus delicious food and drink, and a few special collab dinner events. Lengua, whose name comes from “tongue” in Spanish, used to taste food and to speak, was produced by Gluttonomy, a food marketing and consulting agency based in Miami, co-founded by Nidal Barake, who is one of our show guests. Shari was happy to sit down with Nidal to discuss his career and inspiration for Lengua, which was its 4th event this year.     In addition, Shari spoke with longtime industry friend, Elad Zvi, Co-Founder of Bar Lab Consulting and former Managing Partner of the globally acclaimed Broken Shaker in Miami Beach.   • Pichaya 'Pam' Soontornyanakij, Potong, Bangkok

    Today on our episode #414 of All in the Industry, Shari Bayer's guest is Pichaya 'Pam' Soontornyanakij, chef/owner of Potong restaurant in Bangkok, Thailand. Pam is an inspirational Thai chef, who has become an international culinary figure, and is serving up progressive, stimulating cuisine in a historic setting. Chef Pam was named Asia’s Best Female Chef in 2024, and The World’s Best Female Chef Award in 2025 by The World’s 50 Best Restaurants. Originally training to become a journalist, Pam turned to cooking and studied at the Culinary Institute of America, and trained under renowned chef Jean-Georges Vongerichten in NYC, before returning to Bangkok. In 2019, when her family’s 120-year-old Chinese herbal pharmacy building became vacant in Bangkok’s Chinatown neighborhood, she took over the space with her family, and after an extensive renovation, created Potong, a one-star Michelin restaurant; currently #13 on Asia’s 50 Best Restaurants 2025, featuring a tasting menu where she tells stories of her family’s unique heritage through some 20 courses of progressive Thai-Chinese cuisine.   • Bo Bech, Restaurant Bobe, Copenhagen

    Today on our episode #411 of All in the Industry, Shari Bayer's guest is Bo Bech, a Danish chef and restaurateur whose restaurant Bobe opened in late 2023 in an attractive townhouse in a cobbled city center square in Copenhagen. Shari visited shortly after its opening on her travels, and sat down with Bo for this conversation on a return trip to Copenhagen in Spring 2024. Bo is not only a celebrated chef and owner, but author and TV personality, and a trailblazer of the Nordic culinary movement. He describes himself as a curious human being, who first made his name at Restaurant Paustian, where he earned a Michelin star, before setting up Geist in 2011 (Shari's solo dining experience on episode #161 from November 2017). Working mostly with Nordic produce, Bo’s dishes are personal reflections of him as a chef, his background and his travels. Bo was also a guest on our show in April 2018, episode #174, which was recorded in person in Brooklyn while he was visiting NYC.     Today on our episode #410 of All in the Industry, Shari Bayer's guests are Rick Smilow, Chairman & CEO of the Institute of Culinary Education (ICE), and Lachlan Sands, President of the Institute of Culinary Education’s LA Campus. ICE, which the school is often referred to for short, is one of the nation’s most prestigious culinary schools, currently headquartered in NYC and with a second location in Los Angeles. This year, in 2025, ICE is celebrating a big milestone – its 50th anniversary. Rick's tenure began in 1995, when he acquired the predecessor school, Peter Kump’s New York Cooking School, which was founded in 1975 by Peter Kump, who was also the founder of the James Beard Foundation. Rick has been the CEO of ICE for 30 years. Lachlan, who has been at the helm of the LA campus since it opened in 2018, is the principal administrator responsible for the success of the school.
