魚介類や海藻、野菜などを、砂糖やしょう油、みりんなどで作った調味料で甘辛く煮つめた料理を、佃煮と呼びます。
佃煮はご飯にのせて食べるほか、お弁当のおかず、お茶漬け、おにぎりの具にしてもよく、酒のつまみとしても愛されています。
佃煮には保存性があるため、日頃から数種類の佃煮を常備している家庭も多いようです。
佃煮という名は、江戸時代に、大阪の佃村から移り住んだ漁師たちが、江戸の佃島で、売り物にならない小魚などを利用して作り始めたことに由来するといわれます。
安く、日持ちもする佃煮は、江戸っ子のあいだで評判となり、全国に広まっていきました。
現在は全国各地で作られ、主な佃煮だけでも118種類にのぼるといわれています。
