Charlotte Biltekoff is Assistant Professor of American Studies and Food Science and Technology at the University of California at Davis. She holds a PhD in American Studies from Brown University and also has a background as a professional cook. Her research examines the cultural politics of dietary health and she publishes and presents her research in both scientific and humanities / social science contexts. Recent publications includes articles in the Annals of the New York Academy of Sciences and Food Culture and Society, and a chapter in the Oxford Handbook of Food History. Biltekoff teaches many different courses about food and culture, including one about how to develop ideas for new food products. She is formerly a board member of the Association for the Study of Food and Society and currently a member of the editorial board of Gastronomica. http://charlottebiltekoff.com/
