While it is unclear how far back in human history popcorn goes, a cave in New Mexico shows that popped kernels of corn may have been in use more than 5000 years ago. Corn has played an important role in the diets of many cultures, and has spread to be a worldwide phenomenon since it was imported from the new world. Did you know that the corn we eat and the corn we pop are two different varieties of maize? In fact, the corn you'd find on your dinner table is most likely unable to pop at all! Only one variety of corn is able to become popcorn--This particular corn variety has small ears, and the kernels burst when exposed to dry heat. In the early 1900's Louise Ruckheim added peanuts and molasses to popcorn to bring Cracker Jack to the world...today there are endless amounts of sweet and savory choices...or for a healthier option...just plain is great.
