約1300年前に肉食禁止令が出て以来、日本では食肉のタブーが長く続きましたが、明治時代にはそのタブーもなくなり、焼き鳥屋が現れはじめます。
しかし当時は、いまのような正肉ではなく、主に臓物(モツ)を焼いていました。
1980年代のグルメブーム以降は、比内地鶏、名古屋コーチンといった「地鶏」「ブランド鶏」を供する店が続々と現れました。
以前は焼き鳥屋といえば煙臭く、中年男性が多いイメージでしたが、最近ではカフェバー風のお洒落なお店も多く、女性だけで、あるいはデートで焼き鳥、ということも珍しくありません。
