  • Ep. 81: Talnua Distillery with Founders Patrick and Meagan Miller
    Mar 15 2023
Talnua Distillery in Colorado is quietly putting out some excellent single pot still whiskey in the Irish style. They follow the Irish Technical Files as far as possible, with only the "made in Ireland using Irish water" regulation unfulfilled. Founders Patrick and Meagan Miller discovered the Irish single pot still style on their honeymoon when, by chance, they were in Ireland when the first Redbreast Cask Strength in decades came to the market. Just a few years later, thousands of miles away, they'd found Talnua and dedicate it solely to that style - the single distillery making only that style in the US. There are other distilleries making single pot still whiskey, just none that are doing that and that alone. Talnua was generous enough to send a full lineup of their products for review, all of which are linked below. The big one? Their 2023 Olde Saint's Keep release. It went live for pre-sale on March 14th - if there are still some left, grab them before they're gone. You won't regret it. _________________ Before we jump into the interview just a few quick notes: If you haven’t joined the Patreon community yet, please consider doing so! • Ep. 3: JK Williams Distilling
    May 5 2021

Episode 3 is here! Coming out on Cinco de Mayo (also known as Cinco de Gato in our household). On this episode, I'm joined by Andy Faris and Jeff Murphy of JK Williams Distilling.

Andy, Jeff, and the JK Williams Team are distilling and producing out of Peoria, Illinois, the former Whiskey Capital of the World. Today, that whiskey history is a long-gone legacy.....or is it? To hear Andy and Jeff talk about it, that legacy was only dormant, and now it's time for whiskey to rise again on the banks of the Illinois River.

Listen for a taste of history, bourbon, rye, and the rise of another distilling legend.

Please follow Whiskey in my Wedding Ring and the Whiskey Ring Podcast on Instagram and Facebook and subscribe to the newsletter on whiskeyinmyweddingring.com. You can find Jk Williams Distilling on Instagram @jkwilliamsdistilling.

  • Ep.71: Sliabh Liag Distillery with Founder James Doherty
    Dec 21 2022

Pronounce it once with me - Sleeve League, with a little "sh" on the "s". Sliabh Liag, translating to "mountain of stones" or "mountain of stone pillars", is a postcard-perfect spot on the northeast coast of Ireland by Donegal. The county, according to Sliabh Liag Distillers Founder James Doherty, is sometimes called "the forgotten county" because it borders more of Northern Ireland than the Republic of Ireland (it's part of the latter but shares only a 5 mile border) and is forgotten by both governments.

Maybe the distillery could change that. It's not their goal, to be clear, but it is their goal to show the world what Donegal and true, historically northern Irish whiskey is all about. Midleton and Bushmills have held down the fort while Irish whiskey fell and rose again - now it's time for the newbies to reclaim that local character.

Whether it's Sliabh Liag in Donegal, Waterford, or Dingle, the new distilleries on the island of Ireland are doing incredible, noteworthy things. Peated Irish whiskey used to mean Connemara - no disrespect to Connemara, but no longer. Thanks to James and Moira at Sliabh Liag, we're about to see a new age of Irish whiskey that hearkens to the old and brings us to the new. I'm damn excited to see where it goes.

  • Ep. 70: Bimber Distillery with Matt McKay
    Dec 14 2022

Bimber is so damn exciting. It just is. Their Bimber Klub sold out in hours, and the Dunphail equivalent is close behind. Founded by Polish husband and wife Dariusz and Ewelina in 2015, this distillery in the City of London is quietly producing some amazing English single malt.

Between the liquid itself (the new make is a distillery exclusive but worthy of seeking out) and the various cask finishings, you might not get the cask you're looking for but you'll always find one that's good.

My guest, Matt, has multiple titles that still don't encompass the full range of duties he has. This is one that more than anything looks towards the future, of what English, Polish, and Scotch distilling can be. I'll be visiting in London in April. I promise I'll report back!
