Simmer Pot for Aries Stellium by @thatglasgowwitch
2 medium oranges, zested and sliced
1 large lime, zested and sliced
1 large lemon, zested and sliced
1/8 teaspoon ground cinnamon
1/8 teaspoon nutmeg, preferably freshly grated
1 section of a star anise pod, crushed
1/2 teaspoon dried lavender flowers
2 teaspoons minced ginger
1 one-and-a-half-inch piece vanilla pod, split, or a small splash of vanilla extract
water to cover
For syrup - when you need a boost oof good luck!

equal amount of sugar to liquid
1/4 teaspoon citric acid per 500ml liquid
Method for the simmer pot
Add the oranges, lime, lemon, cinnamon, nutmeg, star anise, lavender, ginger, and vanilla to a pot. Cover with water and bring gently to a simmer. Reduce the heat and let it bubble softly, topping up with more water as needed. Allow the steam to fill the home and carry the energy of luck, prosperity, clarity, sweetness, and success through the space.
To turn it into a syrup
Once the simmer pot has infused well and the liquid is fragrant and flavourful, strain out all of the solids. Measure the remaining liquid. Add it back to a clean pot with an equal amount of sugar. For example, if you have 500ml of strained liquid, add 500g of sugar. Stir over a low heat until the sugar has fully dissolved, then add 1/4 teaspoon of citric acid per 500ml of liquid. Simmer very gently for a few more minutes until slightly thickened. Let it cool, then pour into a clean sterilized bottle or jar and store in the fridge.
