STICKY TOFFEE PUDDING RECIPE
INGREDIENTS
Batter
- 8 ounces of dates
- 1 cup of boiling water
- 1/3 cup of butter
- 2/3 cup of brown sugar
- 2 teaspoons of vanilla extract
- 2 eggs
- 2 Tablespoons of molasses
- 1 2/3 cups of all-purpose flour
- 1 1/2 teaspoons of baking powder
- 1 teaspoon of baking soda
- ¼ teaspoon of salt
Toffee Sauce
- 1/2 cup of heavy whipping cream
- ½ cup of butter
- 3/4 cup of brown sugar
DIRECTIONS
- Preheat oven to 350 degrees
- Add dates and boiling water to a blender. Leave sitting for 5 minutes.
- Cream butter and sugar together. Then add the eggs one at a time and mix until light and fluffy.
- Add molasses and mix.
- Sift flour, baking powder and salt together. Add to the batter in small amounts.
- Blend dates. Once blended, add baking soda and mix.
- Pour the date mixture into the batter.
- Pour batter into a muffin tin or a square tin. If you are using the muffin tin, bake for 18-20 minutes. If you are using the square tin, bake for 22-25 minutes.
- While the batter is baking, add cream, brown sugar, butter and salt into a saucepan.
- cook on low for 7-10 minutes until it has thickened.
- Once puddings are baked, take them out of the oven and spoon the toffee sauce over top.
- Enjoy!
