This podcast is made up of episodes recorded by University students attending the Gut Reaction course at DIS Copenhagen (Study Abroad in Scandinavia).

We focus on the gut microbiome and its interactions with the different organs and systems. Each semester starts with reflecting on us and them (our microbes), and the concept that we contain multitudes. Next, we explore individual pieces of the puzzle, and put them together to see the big picture. Concepts of ecology, biology, physiology, and genetics help glue everything together.
To a lesser extent, we also look at other microbiomes.

We like to keep it simple, so all episodes were recorded on a mobile phone and are non-edited single takes.

  • Microbiome feast: sourdough
    Apr 10 2026

In this audio blurb, Athena shares how sourdough is made.
This series is called microbiome feast, and we invite you to sit with us and learn about food and microbes.
At the start of the semester, as practise for a longer podcast episode, and to get into the subject of microbes and the gut microbiome, students pick a food or drink that is made or modified by microorganisms, do a little bit of research, and then record a sound bite where they describe the biochemical processes and the microbes present.
Even if more than one student has chosen the same food or drink, no 2 soundbites are the same, as either different angles or information were chosen and, of course, each student is unique and therefore the delivery is also different. If you come across a repeated food or drink, maybe you can test your knowledge and try to remember the processes and specific species involved!
