From Cubicles to Crops: Turning Empty Offices into Vertical Farms

In the city center, vacant offices are being turned into vertical farms. We follow a team growing lettuce, mushrooms, and microgreens on 18-foot racks, shrinking what used to take 'hundreds of acres' into just a few thousand square feet. By locating the farm closer to consumers, they reduce miles traveled, waste, and costs—redefining urban real estate as food infrastructure and bringing fresh produce to areas that need it.
