  • How Brewing with Salvo Can Improve Your Beer
    Apr 13 2026

For more than a decade, IPA, in all its variants, ruled the craft beer world. It’s a beer style built on hops. While IPA ruled the world, so did hops. But as the beer world has evolved, so have hop products. No longer is it enough to throw a ton of the latest hop variety into a hazy beer. New hop products can be used differently, add new flavors and aromas and change mouthfeel.

In this bonus episode, sponsored by Hopsteiner, we talk about how brewers can think about hops in a whole new way–not just IBUs and oils, but texture and mouthfeel. And while hop varieties were, for a while, chasing tropical flavors, new varieties are supporting the current trend toward lagers.

Our Tropics yeast is based on a London Ale strain, but we added a new gene to its genome that codes for a unique thiol-releasing enzyme. The enzyme converts the precursors in barley to free thiols that smell and taste like passionfruit and grapefruit. It’s super clean. No off-flavors like burnt rubber or other sulfurous notes. Just tropical aromatics. You don’t have to do anything unusual either, like mash hopping. Just pitch dry Tropics and supercharge your hazy IPA.

  • One Iconic Beer: Allagash White
    Mar 16 2026

On this premiere episode we examine Allagash White, perhaps the world's most iconic interpretation of this classic Belgian style. Yet what we think of witbier today is a recent reinvention of an older, wilder style of beer brewed in the village of Hoegaarden.
In this episode, we'll hear from author Stan Hieronymus, whose Brewing With Wheat offers the definitive history of the style. Hieronymus situates the witbier style in Belgian's brewing history, and explains how it hopped the Atlantic to land in Portland, Maine.
We also hear from Rob Tod, the man who founded Allagash specifically to brew the famous style from Hoegaarden. Tod founded Allagash 31 years ago, and in that time, his flagship has become a Maine standard.
This is the story of witbier, the story of Allagash, and our first iconic beer.
