Fresh eggs are, without a doubt, a most pleasurable and complete food; they are also, at certain times, a food of the most expensive. This state of affairs results from the laying which varies, from one season to another, from simple to double, and sometimes to triple. Hence the utility and necessity of making reserves for the poor months during the months of abundant spawning; but it is then essential to ensure the preservation of eggs whose consumption is not immediate. Egg preservation processes can be divided into two groups: 1) cold preservation methods for eggs; 2) preservation methods other than cold. The methods in the second group, which do not require refrigeration or electricity, are very practical and easy to carry out everywhere, with yields sometimes exceeding those using refrigeration.
