Having trained as a researcher in multiple scientific disciplines, including Food Science, Nutrition, and Master Herbalist, Susan’s professional experience extends over a broad range of work in education, patient care, and wellness. As both an alumni of Brigham Young University and Arizona State University, her undergraduate and graduate degrees involved animal research in diabetes and food product development. In addition to working with individual clients and adjunct nutrition instructor, volunteering as a community nutrition resource has broadened her understanding outside of acadamia. Susan's background includes working as an adjunct intructor in both biology and clinical nutrition at Westminster University in Salt Lake City. During her time at Westminster, Susan helped develop the nutrition curriculum for the nursing program and instructed at the Snowbird Continuing Education Conference for nurse practitioners and physician assistants. Her book, Mission: Nutrition - Calories Matter But They Don’t Count….At Least Not the Way You Think They Do! published in January 2018. Susan currently currently works as an adjunct nutrition instructor at Park University - Gilbert and sees clients exclusively online in her private nutrition practice, Nutritious Insight. From digestion to diabetes, fertility to menopause, mental health, and weight management, Susan's passion brings data focused nutrition solutions to her clients.
